{"id":43,"date":"2014-05-18T17:18:38","date_gmt":"2014-05-18T16:18:38","guid":{"rendered":"http:\/\/blog.apthisa.com\/?p=43"},"modified":"2014-05-18T17:18:38","modified_gmt":"2014-05-18T16:18:38","slug":"contaminaciones-cruzadas","status":"publish","type":"post","link":"https:\/\/apthisa.com\/en\/contaminaciones-cruzadas\/","title":{"rendered":"CONTAMINACIONES CRUZADAS"},"content":{"rendered":"<p>\u00a1Buenos d\u00edas amig@s!<\/p>\n<p>&nbsp;<\/p>\n<p>Hoy vamos a explicaros un t\u00e9rmino que seguramente habr\u00e9is oido en numerosas ocasiones: CONTAMINACI\u00d3N CRUZADA.<\/p>\n<p>La\u00a0<strong>contaminaci\u00f3n cruzada<\/strong>\u00a0es la transmisi\u00f3n de microorganismos de un alimento contaminado, en la mayor\u00eda de los casos crudo, a otro que ya estaba \u00abdescontaminado\u00bb-cocinado o desinfectado-. Esta contaminaci\u00f3n, es una de las causas m\u00e1s frecuentes de intoxicaciones o toxoinfecciones,\u00a0en las empresas alimentarias y en nuestras propias cocinas.Se puede producir por contacto directo entre los dos alimentos, o de manera indirecta, es decir, a trav\u00e9s de las manos del manipulador o mediante otros \u00fatiles ( superficies, cuchillos, tablas de corte&#8230;).<\/p>\n<p>Como ya sabr\u00e9is las materias primas (carnes, huevos, vegetales) contienen de manera natural numerosos microorganismos y contaminaci\u00f3n. De nuestra correcta manipulaci\u00f3n va a depender que esta contaminaci\u00f3n no llegue a nuestra barriguita&#8230;bien cocinando los alimentos de manera correcta (m\u00e1s de 65\u00baC durante 3 minutos) o bien desinfect\u00e1ndolos en el caso de vegetales crudos. \u00a1Y por supuesto evitando las contaminaciones cruzadas!<\/p>\n<p>Como ya os adelantamos puede producirse contaminaci\u00f3n cruzada de manera directa, por contacto entre un alimento \u00ablimpio\u00bb y otro \u00absucio\u00bb, normalmente por incorrecta colocaci\u00f3n dentro de nuestro frigorifico. Los alimentos crudos \u00abcontaminados\u00bb deben colocarse siempre en estanter\u00edas inferiores a los \u00ablimpios\u00bb, ya preparados y listos para el consumo, ya que puede haber posibilidad de goteo. Es muy importante tambi\u00e9n almacenar los productos siempre protegidos (idealmente tapados de manera herm\u00e9tica) mediante papel de film, de alumnio , no solo por el tema que estamos viendo sino tambi\u00e9n por posibilidad de mezcla de olores en el frigor\u00edfico.<\/p>\n<p>&nbsp;<\/p>\n<p>En el caso de contaminaci\u00f3n indirecta, normalmente se produce por un inadecuado lavado de manos o de \u00fatiles en contacto con los alimentos. Debemos acostumbrarnos a lavarse siempre las manos antes de cocinar y despu\u00e9s de manipular alimentos crudos o cambiar de un alimento crudo a otro. Igualmente, no debemos utilizar nunca los mismos utensilios (cuchillos, cubiertos, platos) para manipular alimentos crudos y cocinados y debemos limpiar a fondo con detergente y agua caliente o cambiar la tabla de cortar al modificar el tipo de alimento.
